What’s better than fresh corn in the summer? MEXICAN Grilled Corn in the summer…or anytime. This is SO easy and tasty!
6 ears corn, husked
6 tablespoons butter
2 teaspoons chili powder
1/4 cup grated cotija cheese
1/4 cup freshly chopped cilantro leaves
Juice of 2 limes
Heat Outdoor Grill to 375 or higher–you’re the judge of your own grill’s heat Place corn, directly on the grill, rotating periodically until kernels get roasted to a brown/black color. When done, Rub each ear of corn with 1 tablespoon butter. Serve immediately, sprinkled with chili powder, cotija, cilantro and lime juice.
